12 baby potatoes

1 cup shredded cheddar cheese

1/2 cup sour cream

1/2 cup cooked bacon, crumbled

1/4 cup green onions, chopped

2 tablespoons olive oil

Salt and pepper to taste

1/2 teaspoon garlic powder

1/2 teaspoon paprika

Instructions
 

Preheat your oven to 400°F (200°C).

    Scrub the baby potatoes under running water and dry them thoroughly.

      In a large bowl, toss the potatoes with olive oil, salt, pepper, garlic powder, and paprika until they are evenly coated.

        Place the potatoes on a baking sheet lined with parchment paper, ensuring they are spaced apart.

          Bake in the preheated oven for about 30-35 minutes, or until the potatoes are fork-tender and their skins are crispy.

            Remove the potatoes from the oven and let them cool slightly for about 10 minutes.

              Using a sharp knife, slice the top of each potato lengthwise and gently squeeze the sides to open them up slightly.

                Use a small spoon to scoop out a little of the insides of each potato, creating a small cavity for the toppings.

                  Fill each potato with a generous amount of shredded cheddar cheese and crumbled bacon.

                    Return the mini loaded baked potatoes to the oven for an additional 5-10 minutes, or until the cheese has melted and is bubbly.

                      Once done, remove from the oven and let cool for a minute.

                        Top each potato with a dollop of sour cream and a sprinkle of chopped green onions for a fresh finish.
