Instructions
Crush the Cookies: In a food processor, pulse the Mint Oreo cookies until they are finely crushed. You can also place them in a ziplock bag and crush them with a rolling pin if you don’t have a food processor.
Mix with Cream Cheese: In a large bowl, combine the crushed Mint Oreos with the softened cream cheese. Mix well until fully blended and a dough-like consistency is achieved.
Chill the Mixture: Cover the bowl with plastic wrap and refrigerate for about 30 minutes, allowing the mixture to firm up.
Shape the Truffles: Once chilled, scoop out tablespoon-sized portions of the mixture and roll them into balls, placing them on a parchment-lined baking sheet.
Melt the Chocolate: In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until melted and smooth.
Coat the Truffles: Dip each Oreo ball into the melted chocolate, using a fork to fully cover them. Gently shake off any excess chocolate before placing them back on the baking sheet.
Add Toppings: While the chocolate is still wet, sprinkle a little crushed Mint Oreo on top of each truffle for decoration.
Set the Truffles: Allow the chocolate to set by placing the truffles back in the refrigerator for about 30 minutes.
Serve: Once set, you can remove the truffles from the baking sheet and arrange them on a serving platter. Garnish with fresh mint leaves if desired.
