8 ounces spaghetti

2 cups cooked chicken, shredded

1 cup Monterey Jack cheese, shredded

1 cup salsa

1 green bell pepper, diced

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon chili powder

1 cup corn (canned or frozen)

1 cup black beans, rinsed and drained

½ cup sour cream

1 tablespoon olive oil

Salt and pepper to taste

Fresh cilantro, for garnish (optional)

Instructions
 

Preheat the oven to 350°F (175°C).

    In a large pot of salted water, cook the spaghetti according to the package instructions until al dente. Drain and set aside.

      In a large skillet, heat olive oil over medium heat. Add the diced onion and green bell pepper; sauté until softened, about 4-5 minutes.

        Stir in the shredded chicken, garlic powder, cumin, chili powder, corn, and black beans. Cook for an additional 3-4 minutes to heat through.

          In a large mixing bowl, combine cooked spaghetti, salsa, sour cream, and the skillet mixture. Gently fold in half of the Monterey Jack cheese. Season with salt and pepper to taste.

            Transfer the spaghetti mixture into a greased 9x13 inch baking dish, spreading it evenly.

              Top with the remaining Monterey Jack cheese.

                Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

                  Remove from the oven and let it cool for a few minutes before slicing.
