Instructions
Preheat your oven to 350°F (175°C).
In a skillet, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onions become translucent (about 3-4 minutes). Set aside to cool slightly.
In a large mixing bowl, combine the ground beef and ground pork. Add the breadcrumbs, grated Parmesan cheese, chopped parsley, sautéed onions, beaten egg, oregano, salt, and pepper. Mix until all the ingredients are well-combined.
Divide the meat mixture in half and flatten each half into an elongated rectangle on parchment paper or a clean surface.
In the center of one of the meat layers, place the mozzarella cheese cubes evenly.
Carefully lift the edges of the meat layer to cover the cheese, sealing it within the meat. Shape it into a loaf shape.
Place the meatloaf onto a baking sheet lined with parchment paper.
Spread the marinara sauce generously over the top of the meatloaf.
Bake in the preheated oven for 1 hour, or until the internal temperature reaches 160°F (70°C) and the juices run clear.
Once cooked, remove from the oven and allow the meatloaf to rest for about 10 minutes before slicing.
Notes
Serve slices on a bed of spaghetti with extra marinara sauce and fresh parsley.
