1 cup almond butter (creamy or crunchy)

1/2 cup honey or maple syrup

1 cup rolled oats

1/4 cup shredded coconut (unsweetened)

1/4 cup mini chocolate chips (dairy-free optional)

1 teaspoon vanilla extract

1/2 teaspoon sea salt

Optional: 1/4 cup chopped nuts (e.g., almonds, walnuts) for added crunch

In a medium mixing bowl, combine the almond butter and honey (or maple syrup). Mix until smooth and well-blended.

    Add the rolled oats, shredded coconut, chocolate chips, vanilla extract, and sea salt to the bowl. If you opted for nuts, toss them in as well.

      Stir everything together with a spatula or wooden spoon until all the ingredients are evenly combined and form a sticky mixture.

        Line a baking sheet with parchment paper. Using a tablespoon, scoop out portions of the dough and roll them into balls (about 1 inch in diameter), then flatten them slightly to form cookie shapes.
