Instructions
Start by placing the Oreo cookies in a food processor. Pulse until they become fine crumbs—this should take about 20-30 seconds.
In a mixing bowl, combine the Oreo crumbs with the softened cream cheese and peppermint extract. Mix well until everything is evenly combined and forms a thick dough-like consistency.
Use your hands to roll the mixture into small balls, about 1 inch in size, and place them on a baking sheet lined with parchment paper. You should get around 20-24 truffles.
Freeze the truffles for about 30 minutes or until firm.
While the truffles are setting, melt the green candy melts according to the package instructions. Stir until smooth.
Once the truffles are firm, dip each one into the melted green candy melts, ensuring they are completely coated. Using a fork, lift them out, allowing any excess candy to drip off.
Place the dipped truffles back on the parchment-lined baking sheet.
Before the candy coating sets, sprinkle green sprinkles on top of each truffle for a festive touch.
In a small microwave-safe bowl, melt the white chocolate chips until smooth. Drizzle the melted white chocolate over each truffle for added decoration.
Allow the truffles to harden completely at room temperature or in the fridge for about 15-20 minutes.
