1 cup vanilla wafer crumbs

3 tablespoons unsalted butter, melted

2 ripe bananas, sliced

2 cups vanilla pudding (store-bought or homemade)

1 cup heavy whipping cream

2 tablespoons powdered sugar

1 teaspoon vanilla extract

Fresh mint leaves, for garnish (optional)

Prepare the Crust: In a medium-sized bowl, combine the vanilla wafer crumbs and melted butter. Mix until the crumbs are fully coated.

    Form the Crust: Press the crumb mixture into the bottoms of mini pie tins or cupcake liners to form a solid crust. Aim for about 1/4 inch thickness. Place the crusts in the refrigerator to set while you prepare the filling.

      Layer the Bananas: Remove the crusts from the fridge. Place a few banana slices at the bottom of each crust.

        Add Pudding: Divide the vanilla pudding evenly among the mini crusts, pouring it over the banana slices and smoothing it out with a spoon.

          Make the Whipped Cream: In a mixing bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form. This should take about 3-4 minutes with an electric mixer on medium speed.

            Top with Whipped Cream: Generously dollop or pipe the whipped cream on top of the pudding layer in each mini pie, creating a fluffy, light top.

              Garnish: Finish with a few more banana slices on top of the whipped cream and a small mint leaf for color and aroma, if desired.

                Chill and Serve: Place the mini pies in the fridge for at least 30 minutes before serving to allow them to set and chill nicely.
