crushed graham crackers

Instructions
In a mixing bowl, beat the softened cream cheese with the powdered sugar until smooth.
Add the vanilla and peppermint extracts to the bowl, and mix until well combined.
Gently fold in the cool whip until the mixture is light and fluffy.
Add the crushed graham crackers to the mixture and stir until fully integrated.
Using your hands, form small balls (about 1 inch in diameter) with the mixture and place them on a parchment-lined baking sheet.
Once all the mixture is formed into bites, cover the sheet with plastic wrap and refrigerate for at least 2 hours or until firm.
Once the bites are chilled and firm, roll them in cocoa powder to coat or leave them plain for a lighter look.
Garnish with mini chocolate chips and sprinkle with crushed peppermint candies for a festive touch.
Notes
Arrange the cheesecake bites on a festive plate, adding a few peppermint candies around the edges for decoration and a pop of color.
