2 cups grated carrots (about 4 medium carrots)

1 cup almond flour

1 cup unsweetened applesauce

1/2 cup crushed pineapple, drained

1/2 cup walnuts or pecans, chopped

1/4 cup unsweetened shredded coconut

3 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

1 teaspoon cinnamon

1/2 teaspoon nutmeg

1/4 teaspoon salt

Optional: 1/4 cup raisins (for extra sweetness)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper for easier removal.

    In a large mixing bowl, whisk together the almond flour, baking soda, baking powder, cinnamon, nutmeg, and salt until well combined.

      In another bowl, beat the eggs and then mix in the applesauce, crushed pineapple, and vanilla extract. Stir until fully incorporated.

        Gradually add the wet mixture to the dry ingredients, mixing until just combined. Do not over-mix.

          Fold in the grated carrots, nuts, coconut, and raisins (if using) gently until evenly distributed in the batter.

            Pour the batter into the prepared cake pan and spread it evenly.

              Bake in the preheated oven for 25-30 minutes or until a toothpick inserted in the center comes out clean.

                Allow the cake to cool in the pan for 10 minutes, then remove it from the pan and transfer it to a wire rack to cool completely.
