2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup unsalted butter, cold and cubed

3/4 cup buttermilk (plus a little extra for brushing)

Instructions
 

Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingertips, cut in the butter until the mixture resembles coarse crumbs.

        Make a well in the center of the mixture and pour in the buttermilk. Stir gently with a fork until just combined (do not overmix).

          Turn the dough out onto a lightly floured surface. Gently knead the dough 3-4 times to bring it together. Pat it into a 1-inch thick rectangle.

            Using a biscuit cutter or a glass, cut out biscuits and place them on the prepared baking sheet. Gather scraps of dough, re-pat, and cut out additional biscuits.

              Brush the tops of the biscuits with a little extra buttermilk for a golden finish.

                Bake for 12-15 minutes or until the biscuits are golden brown on top.

                  Remove from the oven and let cool slightly before serving.
