4 boneless, skinless chicken thighs

4 medium-sized baby potatoes, halved

4 cloves garlic, minced

1/2 cup grated Parmesan cheese

1 teaspoon dried thyme

1 teaspoon paprika

1/2 teaspoon black pepper

1 teaspoon salt

2 tablespoons olive oil

1 tablespoon fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C) and prepare a large baking sheet by lining it with parchment paper.

    In a small bowl, combine the minced garlic, Parmesan cheese, thyme, paprika, black pepper, and salt. Mix well to create a flavorful blend.

      In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil until evenly coated. Spread the potatoes on one side of the prepared baking sheet.

        Rub the chicken thighs with the remaining tablespoon of olive oil and season both sides with the garlic-Parmesan mixture, pressing it onto the chicken for better adherence.

          Place the seasoned chicken on the baking sheet next to the potatoes.

            Bake in the preheated oven for 25-30 minutes or until the chicken is cooked through (internal temperature should reach 165°F/75°C) and the potatoes are golden and tender.

              If desired, broil for an additional 2-3 minutes at the end for a crispy finish on the chicken and potatoes.

                Remove from the oven and let it rest for a few minutes.
