Ingredients

1 box of yellow cake mix (plus ingredients required on the box, usually eggs, water, and oil)

1 cup Orange Crush soda

1 cup powdered sugar

1 cup heavy whipping cream

1 teaspoon vanilla extract

Zest of 1 orange

2 tablespoons fresh orange juice

1 cup mandarin orange segments, drained

Optional: Orange slices for garnishing

Instructions

Prepare the Cake: Preheat your oven to 350°F (175°C). Grease and flour a 9x13 inch baking dish. Follow the instructions on the cake mix box to combine the cake mix, eggs, water, and oil. Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.

Poke the Cake: Once the cake is done baking, remove it from the oven and let it cool in the pan for about 10 minutes. Then, using the end of a wooden spoon or a large straw, poke holes all over the top of the cake (about 1 inch apart).

Prepare the Orange Crush Sauce: In a mixing bowl, combine 1 cup of Orange Crush soda and 1 cup of powdered sugar. Stir until the sugar is completely dissolved. Pour this mixture over the warm cake, allowing it to seep into the holes.

Make the Whipped Topping: In another bowl, whip the heavy cream until soft peaks form. Add in the vanilla extract, orange zest, and fresh orange juice, continuing to whip until stiff peaks form.

Frost the Cake: Once the cake has cooled completely, spread the whipped topping evenly over the top. Decorate with mandarin orange segments, placing them evenly across the surface.

Chill: Cover the cake with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld and the cake to set.

Serve: Once chilled, slice the cake into squares and serve. You can garnish individual pieces with fresh orange slices if desired.
