1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon baking powder

1 teaspoon garlic powder

1/4 teaspoon black pepper

1/4 teaspoon salt

2 large eggs, beaten

Oil for frying (vegetable or canola)

For the Orange Sauce:

Zest of 1 large orange

1/2 cup fresh orange juice

1/4 cup sugar

1/4 cup soy sauce

1 tablespoon rice vinegar

1 tablespoon cornstarch mixed with 2 tablespoons water

1/4 teaspoon crushed red pepper flakes (optional)

Sliced green onions and sesame seeds for garnish

Prep the Chicken: In a large mixing bowl, combine the flour, cornstarch, baking powder, garlic powder, pepper, and salt. Mix until well combined.

    Coat the Chicken: Dip each chicken piece into the beaten eggs, then dredge them in the flour mixture, ensuring they are evenly coated.

      Fry the Chicken: Heat oil in a deep skillet or wok over medium-high heat. Carefully add the coated chicken pieces in batches to avoid overcrowding. Fry for 5-7 minutes or until golden brown and cooked through. Transfer the fried chicken to a paper towel-lined plate to drain excess oil.

        Make the Sauce: In a separate saucepan, combine the orange zest, orange juice, sugar, soy sauce, and rice vinegar. Heat over medium heat until the sugar dissolves. Bring the mixture to a gentle simmer.

          Thicken the Sauce: Stir in the cornstarch-water mixture and crushed red pepper flakes, then cook for another 2-3 minutes or until the sauce thickens.

            Combine & Serve: Add the fried chicken to the saucepan and gently toss to coat the pieces evenly with the orange sauce.

              Garnish: Plate the chicken and garnish with sliced green onions and sesame seeds.
