1 cup grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 teaspoons garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried Italian herbs (oregano, basil, thyme)

2 large eggs

1 tablespoon Dijon mustard

Salt and pepper to taste

1/4 cup fresh parsley, chopped (for garnish)

Olive oil spray or 2 tablespoons of melted butter

Prepare the Chicken: Preheat your oven to 400°F (200°C). Pat the chicken breasts dry and season both sides with salt and pepper.
