1.5 pounds baby potatoes, halved

1 cup grated Parmesan cheese

1/2 cup breadcrumbs (preferably panko for extra crunch)

3 tablespoons olive oil

2 teaspoons garlic powder

1 teaspoon dried oregano

1 teaspoon smoked paprika

Salt and black pepper to taste

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper for easy cleanup.

    In a large mixing bowl, combine the halved baby potatoes, olive oil, garlic powder, dried oregano, smoked paprika, salt, and pepper. Toss until the potatoes are evenly coated.

      In a separate bowl, mix together the grated Parmesan cheese and breadcrumbs.

        Take each potato half and dip the cut side into the cheese and breadcrumb mixture, ensuring that the top is well-coated.

          Arrange the coated potato halves cut side up on the prepared baking sheet.

            Bake in the preheated oven for 25-30 minutes, or until the potatoes are tender and the crust is golden and crispy.

              Once baked, remove the potatoes from the oven and let them cool for a few minutes. Garnish with freshly chopped parsley before serving.
