Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a medium mixing bowl, combine the creamy peanut butter and granulated sugar. Stir until well blended.
Add the egg, vanilla extract, baking soda, and salt to the mixture. Mix until smooth and all ingredients are well incorporated.
Using a tablespoon or cookie scoop, scoop out dough and roll it into balls. Roll each ball in granulated sugar to coat.
Place the dough balls on the prepared baking sheet about 2 inches apart as they will spread.
Bake in the preheated oven for 10-12 minutes, or until the cookies are lightly golden and just set at the edges.
Remove from the oven and immediately press a chocolate kiss into the center of each cookie while they are still warm. Allow them to cool on the baking sheet for 5 minutes.
Transfer the cookies to a wire rack to cool completely.
Notes
Arrange the cookies on a decorative plate and drizzle some melted chocolate over them for an elegant touch. Serve with a glass of cold milk for the ultimate treat!
