1 ½ cups graham cracker crumbs

⅓ cup granulated sugar

½ cup unsalted butter, melted

4 (8 oz) packages Philadelphia cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

4 large eggs

½ cup sour cream

½ teaspoon lemon juice

Instructions
 

Preheat your oven to 325°F (163°C) and line a 9x13 inch baking pan with parchment paper, leaving an overhang on the sides for easy removal.

    In a medium bowl, mix together the graham cracker crumbs, ⅓ cup sugar, and melted butter until combined and crumbly.

      Press the crumb mixture evenly into the bottom of the prepared pan to form the crust. Bake for 10 minutes, then remove from the oven and allow to cool slightly.

        In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy, about 2 minutes.

          Gradually add 1 cup sugar and beat until well combined. Scrape down the sides of the bowl as necessary.

            Add in the vanilla extract, and blend well. Then, add each egg one at a time, mixing well after each addition.

              Stir in the sour cream and lemon juice until fully incorporated and the mixture is smooth.

                Pour the cream cheese mixture over the cooled crust and spread it evenly.

                  Bake for 30-35 minutes or until the edges are lightly set and the center has a slight jiggle (it will set as it cools).

                    Remove from the oven and let it cool at room temperature for about an hour before transferring to the refrigerator. Chill for at least 4 hours, or overnight for best results.

                      Once chilled, lift the cheesecake bars out of the pan using the parchment overhang. Cut into squares, and serve topped with fresh fruit if desired.
