Ingredients

1 lb ribeye steak, thinly sliced

1 tablespoon olive oil

1 small onion, thinly sliced

1 small green bell pepper, thinly sliced

1 small red bell pepper, thinly sliced

1 teaspoon garlic powder

Salt and pepper to taste

4 slices provolone cheese (or cheese of your choice)

2 fresh hoagie rolls

Optional: sliced jalapeños for an extra kick

Instructions

Heat the olive oil in a large skillet over medium-high heat. Add the onion and bell peppers, sautéing until they are soft and slightly caramelized, about 5-7 minutes. Season with salt, pepper, and garlic powder. Remove the vegetables from the pan and set aside.

In the same skillet, add the thinly sliced ribeye steak. Season with salt and pepper and cook until browned and cooked to your liking, about 5 minutes. Stir occasionally to ensure even cooking.

Return the sautéed onion and bell peppers to the skillet, mixing them well with the steak. Cook for an additional 1-2 minutes to heat through.

Reduce the heat to low and lay the slices of provolone cheese over the steak mixture. Cover the skillet with a lid for a minute or until the cheese melts completely.

While the cheese is melting, split the hoagie rolls and lightly toast them if desired.

Once the cheese has melted, scoop the steak and cheese mixture into each hoagie roll. If using, add sliced jalapeños for some extra heat.

Serve immediately while hot and gooey, optionally paired with your favorite dipping sauce.
