1 can (20 oz) pineapple slices in juice, drained (reserve the juice)

1/2 cup unsalted butter (1 stick), melted

3/4 cup brown sugar, packed

1/4 cup maraschino cherries

1 1/2 cups all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

2 large eggs

1 teaspoon vanilla extract

1/2 cup reserved pineapple juice

1/2 cup sour cream

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9-inch round cake pan and line the bottom with parchment paper for easier removal.

    In a separate bowl, combine the melted butter and brown sugar until well blended. Pour the mixture into the prepared cake pan and spread evenly.

      Arrange the drained pineapple slices on top of the butter and brown sugar mixture in the pan. Place a maraschino cherry in the center of each pineapple ring and in any empty spaces.

        In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, baking soda, and salt.

          In another bowl, beat together the eggs, vanilla extract, reserved pineapple juice, and sour cream until smooth.

            Gradually pour the wet ingredients into the dry ingredients while stirring until just combined. Do not overmix; a few lumps are okay.

              Gently pour the batter over the pineapple slices in the cake pan, smoothing it out with a spatula.

                Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center of the cake comes out clean.

                  Once baked, allow the cake to cool in the pan for about 10 minutes. Then, carefully invert the cake onto a serving plate while it's still warm. Remove the parchment paper.

                    Allow the cake to cool slightly before slicing and serving.
