1 cup all-purpose flour

1/2 cup granulated sugar

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/2 cup unsalted butter, softened

2 large eggs

1/2 teaspoon vanilla extract

1/2 cup crushed pineapple, drained

1/2 cup maraschino cherries, drained and halved

1/2 cup unsweetened coconut flakes (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C). Line a cupcake pan with cupcake liners and set aside.

    Make the Topping: In a small bowl, mix the brown sugar with 2 tablespoons of softened butter until combined. Spoon about 1 tablespoon of this mixture into the bottom of each cupcake liner, smoothing it out evenly.

      Add Pineapple and Cherries: Place 1 tablespoon of crushed pineapple on top of the brown sugar mixture in each liner, followed by a half maraschino cherry. If using coconut flakes, sprinkle some over the pineapple.

        Prepare the Cupcake Batter: In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy. This should take about 2-3 minutes using a hand mixer.

          Incorporate Eggs and Vanilla: Beat in the eggs one at a time, mixing well after each addition. Add the vanilla extract and mix until fully combined.

            Combine Dry Ingredients: In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing just until combined. Do not overmix.
