Instructions
In a large mixing bowl, whisk together the instant pistachio pudding mix and cold milk until it thickens (about 2 minutes).
Gently fold in the crushed pineapple, making sure it’s well distributed.
Add the mini marshmallows, nuts, and shredded coconut (if using) to the mixture, gently folding them in.
Finally, carefully fold in the whipped topping until everything is combined and has a lovely light green color.
If desired, add the almond extract for an extra hint of flavor and mix gently.
Cover the bowl with plastic wrap and refrigerate for at least 2 hours to allow the flavors to meld and the salad to set.
Before serving, give the salad a quick stir and adjust any toppings as desired.
Notes
Serve in a chilled glass bowl for a refreshing look, and top with additional chopped nuts and whipped topping for garnish.
