4 medium potatoes, peeled and diced

1 pound smoked sausage (such as kielbasa), sliced

1 medium onion, chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup heavy cream

2 cups corn (fresh or frozen)

2 tablespoons olive oil

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

    Add the sliced sausage to the pot and cook until browned, about 5-7 minutes.

      Stir in the diced potatoes, dried thyme, salt, and pepper, mixing well for 1-2 minutes.

        Pour in the chicken broth and bring the mixture to a boil. Once boiling, reduce the heat to low and let it simmer for about 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are soft, add in the corn and heavy cream, stirring to combine. Let the chowder simmer for an additional 5 minutes, allowing it to thicken slightly.

            Taste and adjust seasoning with more salt and pepper if needed.

              Serve hot, garnished with fresh parsley for a pop of color.
