1 lb beef chuck, cut into 1-inch cubes

2 tablespoons olive oil

2 cups beef broth

4 medium potatoes, peeled and diced

2 carrots, sliced

1 celery stalk, diced

1 small onion, chopped

3 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried rosemary

Salt and pepper to taste

1 package (16 oz) potato gnocchi

1 cup frozen peas (optional)

Fresh parsley, chopped (for garnish)

Instructions
 

Sear the Beef: In a large pot, heat the olive oil over medium-high heat. Add the beef cubes and sear until browned on all sides (about 5-7 minutes). Remove the beef and set aside.

    Sauté the Vegetables: In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté for about 5 minutes until softened.

      Add Broth and Seasonings: Return the beef to the pot and add the beef broth, diced potatoes, thyme, rosemary, salt, and pepper. Stir to combine.

        Simmer: Bring the stew to a boil, then reduce the heat to low. Cover and let it simmer for about 45 minutes, or until the beef is tender.

          Cook the Gnocchi: After the stew has simmered, add the gnocchi to the pot. If using peas, add them at this stage as well. Cook for an additional 3-5 minutes until the gnocchi float to the surface and are cooked through.

            Final Taste Check: Adjust the seasoning with more salt and pepper if needed.

              Serve: Ladle the stew into bowls and garnish with chopped parsley.
