1 package (about 18-20) frozen potstickers (your choice of filling)

6 cups chicken or vegetable broth

2 cups water

1 tablespoon sesame oil

1 tablespoon fresh ginger, grated

3 cloves garlic, minced

1 cup bok choy, chopped

1 cup mushrooms, sliced (shiitake or button)

1 carrot, julienned

3 green onions, finely chopped (whites and greens separated)

2 tablespoons soy sauce

1 teaspoon soy sauce, for garnish

Fresh cilantro, for garnish

Salt and pepper to taste

Instructions
 

In a large pot, heat the sesame oil over medium heat. Add the grated ginger and minced garlic, sautéing until fragrant, about 1 minute.

    Pour in the chicken or vegetable broth and water, bringing it to a gentle boil.

      Once boiling, add the frozen potstickers carefully to the broth. Reduce the heat to a simmer and cook for 5-7 minutes, or until the potstickers are heated through.

        Stir in the chopped bok choy, mushrooms, julienned carrot, and the white parts of the green onions. Simmer for an additional 3-5 minutes, until the vegetables are tender.

          Season the soup with soy sauce, salt, and pepper to taste.

            Ladle the soup into bowls and garnish each serving with the green parts of the green onions, a drizzle of soy sauce, and fresh cilantro.
