Ingredients

12 oz rigatoni pasta

2 cups pumpkin puree (fresh or canned)

1 cup Gruyere cheese, grated

1 cup heavy cream

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried sage

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: Pinch of nutmeg

Instructions

Cook Pasta: In a large pot of salted boiling water, cook the rigatoni according to package instructions until al dente. Drain and set aside.

Sauté Aromatics: In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Then add the minced garlic and cook for an additional minute until fragrant.

Make the Sauce: Stir in the pumpkin puree, heavy cream, sage, thyme, salt, and pepper (and nutmeg if using). Cook over low heat for about 5 minutes, stirring occasionally until heated through and well combined.

Combine Pasta and Sauce: Add the cooked rigatoni to the skillet with the pumpkin sauce. Gently toss until all the pasta is well coated in the sauce.

Add Gruyere: Gradually add the grated Gruyere cheese, stirring until melted and creamy. Adjust seasoning to taste with additional salt and pepper if needed.

Serve: Spoon the creamy pumpkin rigatoni into bowls, garnishing with fresh parsley and an extra sprinkle of Gruyere cheese on top.
