1 cup canned pumpkin puree

1/2 cup almond butter (or peanut butter)

1/4 cup honey (or maple syrup for a vegan option)

1 teaspoon vanilla extract

1 cup rolled oats

1/2 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon pumpkin pie spice

1/2 teaspoon cinnamon

1/4 teaspoon salt

1/2 cup chocolate chips (or nuts/dried fruit for a healthier option)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, combine the pumpkin puree, almond butter, honey (or maple syrup), and vanilla extract. Mix until smooth and well combined.

      In a separate bowl, whisk together the rolled oats, whole wheat flour, baking powder, pumpkin pie spice, cinnamon, and salt.

        Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.

          Fold in the chocolate chips (or your choice of nuts/dried fruit).

            Using a tablespoon, scoop portions of the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart. Flatten them slightly with the back of the spoon.

              Bake for 12-15 minutes, or until the edges are lightly golden.

                Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
