½ cup brown sugar

¼ cup granulated sugar

1 teaspoon baking powder

½ teaspoon ground cinnamon

½ teaspoon ground nutmeg

½ teaspoon salt

½ cup unsalted butter, melted

1 large egg

1 cup pure pumpkin puree

½ cup sweetened condensed milk

1 teaspoon vanilla extract

¼ teaspoon ground ginger

½ cup rolled oats

½ cup chopped pecans (optional)

½ teaspoon pumpkin spice

Instructions
 

Preheat your oven to 350°F (175°C). Grease an 8x8 inch baking dish or line it with parchment paper for easy removal.

    In a medium bowl, whisk together the flour, brown sugar, granulated sugar, baking powder, cinnamon, nutmeg, and salt until well combined.

      Pour in the melted butter and egg, stirring until the mixture forms a crumbly dough. Set aside about 1 cup of the mixture for the crumble topping.

        Press the remaining dough into the prepared baking dish to form an even base layer.

          In a separate bowl, combine the pumpkin puree, sweetened condensed milk, vanilla extract, ginger, and pumpkin spice. Mix until smooth and well combined.

            Spread the pumpkin filling evenly over the pressed crust layer in the baking dish.

              Take the reserved crumble mixture and mix it with rolled oats and chopped pecans, if using. Sprinkle this topping over the pumpkin layer evenly.

                Bake in the preheated oven for 30-35 minutes or until the top is golden brown and the filling is set.

                  Remove from the oven and allow to cool completely in the dish on a wire rack before cutting into bars.
