2 cups white American cheese, shredded

1 cup Monterey Jack cheese, shredded

1 cup milk

1 tablespoon unsalted butter

1 small onion, finely chopped

1 jalapeño, deseeded and minced

1 garlic clove, minced

1/2 teaspoon ground cumin

1/2 teaspoon paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Tortilla chips (for serving)

Instructions
 

In a medium saucepan, melt the unsalted butter over medium heat.

    Add the finely chopped onion and sauté for 3-4 minutes until translucent.

      Stir in the minced jalapeño and garlic, cooking for an additional 1-2 minutes until fragrant.

        Pour in the milk and bring it to a gentle simmer, stirring occasionally.

          Gradually add the shredded white American cheese and Monterey Jack cheese to the saucepan, stirring continuously until melted and smooth.

            Season with ground cumin, paprika, salt, and pepper, adjusting the flavors to your liking.

              Once the cheese is fully melted and combined, remove from heat and let it cool slightly.

                Transfer the queso blanco to a serving bowl and sprinkle chopped cilantro on top for a fresh finish.
