Instructions
In a large slow cooker, place the boneless chicken breasts at the bottom.
In a medium bowl, whisk together the teriyaki sauce, grated ginger, and minced garlic, then pour it over the chicken.
Add the pineapple chunks, sliced red bell pepper, and broccoli florets on top of the chicken.
Cover the slow cooker with a lid and cook on low for 4 hours or high for 2 hours, until the chicken is thoroughly cooked and tender.
Once cooked, shred the chicken directly in the slow cooker using two forks, mixing it with the sauce and veggies.
Serve over cooked rice or quinoa in bowls.
Finish by sprinkling with sesame seeds and chopped green onions for garnish.
