2 packs instant ramen noodles (discard the seasoning packets)

1 cup broccoli florets

1 red bell pepper, thinly sliced

1 carrot, julienned

1 cup snap peas

3 green onions, chopped

3 cloves garlic, minced

1 tablespoon ginger, grated

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon oyster sauce (optional)

1 teaspoon chili paste (adjust to taste)

1 tablespoon sesame seeds for garnish

Instructions
 

Begin by cooking the ramen noodles according to package instructions, but reduce the cooking time by about 2 minutes to ensure they remain slightly firm. Drain and set aside.

    In a large wok or skillet, heat the sesame oil over medium-high heat. Add the minced garlic and grated ginger, sautéing for about 30 seconds until fragrant.

      Add the broccoli, red bell pepper, carrot, and snap peas to the wok. Stir-fry for about 4-5 minutes, or until the vegetables are tender yet still vibrant in color.

        Push the vegetables to the side of the wok; add in the cooked ramen noodles. Pour the soy sauce, oyster sauce, and chili paste over the noodles, tossing everything together gently until well combined.

          Stir in the chopped green onions and continue stir-frying for an additional 2 minutes, allowing the flavors to meld together.

            Taste and adjust seasoning if needed, adding more soy sauce or chili paste according to your preference.

              Once everything is well mixed and heated through, remove from heat and transfer it to a serving dish.

                Garnish with sesame seeds before serving.
