1 ½ cups all-purpose flour

1 cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

½ cup buttermilk

Zest of 1 lemon

2 tablespoons lemon juice

1 teaspoon vanilla extract

1 ½ teaspoons baking powder

½ teaspoon baking soda

¼ teaspoon salt

1 cup fresh raspberries (plus extra for garnish)

½ cup powdered sugar (for frosting)

1 cup heavy whipping cream

Instructions
 

Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.

    In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

      Add the eggs, one at a time, beating well after each addition. Mix in the lemon zest, lemon juice, and vanilla extract until just combined.

        In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.

          Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined; be careful not to overmix.

            Gently fold in the fresh raspberries into the batter, reserving a few for garnish.

              Spoon the batter into the prepared cupcake liners, filling each about 2/3 full.

                Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  For the frosting, beat the heavy whipping cream until soft peaks form. Gradually add the powdered sugar and continue to beat until stiff peaks form.

                    Once the cupcakes are cool, frost them generously with the whipped cream frosting using a piping bag or a spatula.

                      Garnish each cupcake with a fresh raspberry on top for a beautiful presentation.
