Instructions
Heat the olive oil in a large pot or Dutch oven over medium heat.
Add the diced onion and minced garlic, sauté until the onion is translucent, about 5 minutes.
Stir in the chopped bell pepper and cook for another 3-4 minutes until softened.
Add the diced eggplant to the pot, and cook for 5 minutes, stirring occasionally.
After the eggplant starts to soften, add the sliced zucchini and yellow squash. Cook for an additional 5 minutes.
Stir in the chopped tomatoes, dried thyme, dried basil, and red pepper flakes (if using). Season with salt and pepper to taste.
Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and let it simmer for about 30 minutes, stirring occasionally.
After 30 minutes, check the seasoning and adjust salt and pepper if necessary.
Serve hot, garnished with fresh basil leaves.
