Ingredients
  

4 large carrots, finely grated

1 small red bell pepper, diced

1 cup cucumber, shredded

¼ cup fresh cilantro, chopped

3 tablespoons tahini

1 tablespoon honey or agave syrup

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 teaspoon ground cumin

Salt and pepper to taste

Optional: ¼ cup roasted sunflower seeds for crunch

Instructions
 

Start by peeling the carrots and using a grater or food processor to finely grate them. Place them in a large mixing bowl.

    Dice the red bell pepper and shred the cucumber. Add both to the bowl with the grated carrots.

      Chop the fresh cilantro and add it to the bowl for a fresh burst of flavor.

        In a separate small bowl, whisk together the tahini, honey (or agave syrup), apple cider vinegar, olive oil, ground cumin, and a pinch of salt and pepper until smooth and well combined.

          Pour the dressing over the carrot mixture and toss everything together thoroughly so that the dressing coats all the vegetables evenly.

            Taste and adjust the seasoning if necessary, adding more salt, pepper, or acid (vinegar) to your preference.

              If using, sprinkle the roasted sunflower seeds on top for added texture and crunch.
