2 pounds baby Yukon Gold potatoes

½ cup sour cream

¼ cup unsalted butter, melted

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon smoked paprika

Salt and pepper to taste

½ cup freshly grated parmesan cheese

2 tablespoons fresh chives, chopped (for garnish)

Olive oil for drizzling

Boil the Potatoes: In a large pot, add the baby Yukon Gold potatoes and cover them with cold water. Add a generous pinch of salt. Bring to a boil over high heat and cook until potatoes are fork-tender, about 15-20 minutes. Drain and let cool slightly.

    Preheat the Oven: While the potatoes are cooling, preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper for easy clean-up.

      Mashing Time: Once the potatoes are cool enough to handle, use a potato masher or the bottom of a glass to gently smash each potato until it is about half an inch thick. Place the smashed potatoes onto the prepared baking sheet.

        Prepare the Mixture: In a small mixing bowl, combine the sour cream, melted butter, minced garlic, onion powder, smoked paprika, and a pinch of salt and pepper. Stir until well mixed.

          Add Flavor to Potatoes: Brush or drizzle the sour cream mixture generously over each smashed potato. Ensure that each one is well-coated for maximum flavor.

            Add Cheesiness: Sprinkle the freshly grated parmesan cheese evenly over the smashed potatoes.
