2 ribeye steaks (about 1 inch thick)

Salt and pepper, to taste

2 tablespoons olive oil

4 large russet potatoes, thinly sliced

1 medium onion, thinly sliced

2 cups heavy cream

1 teaspoon garlic powder

1 teaspoon dried thyme

1 ½ cups shredded cheddar cheese

1 cup shredded Gruyère cheese

Fresh chives, chopped (for garnish)

Prep the Scalloped Potatoes: Preheat your oven to 375°F (190°C). In a greased baking dish, layer half of the sliced potatoes and half of the sliced onions. In a bowl, mix the heavy cream, garlic powder, thyme, salt, and pepper. Pour half of this mixture over the potatoes and onions. Sprinkle 1 cup of cheddar cheese and half of the Gruyère on top.

    Layer Ingredients: Add the remaining potato and onion slices on top, then pour the rest of the cream mixture over it. Top with the remaining cheeses.

      Bake the Potatoes: Cover the baking dish with aluminum foil and bake for 45 minutes. Remove the foil and bake for an additional 20 to 25 minutes, or until the potatoes are tender and the top is bubbly and golden.

        Prepare the Ribeye Steaks: While the potatoes are baking, season both sides of the ribeye steaks generously with salt and pepper.

          Cook the Steaks: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the steaks and sear for about 4-5 minutes on each side for medium-rare doneness. Adjust the cooking time according to your desired doneness.

            Rest and Serve: Remove the steaks from the skillet and let them rest for about 5 minutes before slicing. This allows the juices to redistribute.
