2 medium onions, thinly sliced

4 tablespoons unsalted butter (divided)

2 tablespoons olive oil

3 cloves garlic, minced

4 medium potatoes, cut into fries

Prep the Onions: In a skillet, melt 2 tablespoons of butter over medium heat. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions are caramelized and golden brown (about 15-20 minutes). Add minced garlic and thyme, then cook for an additional 2 minutes. Remove from heat and set aside.

    Prepare the Fries: Preheat your oven to 425°F (220°C). Toss the cut potatoes in 2 tablespoons of olive oil, salt, pepper, and paprika if using. Spread them out on a baking sheet in a single layer. Bake for 25-30 minutes, flipping halfway, until crispy and golden.

      Cook the Ribeye: While the fries are baking, season the ribeye steaks generously with salt and pepper. Heat a cast-iron skillet over high heat until very hot. Add the remaining 2 tablespoons of butter. Once melted and bubbling, carefully place the ribeyes in the skillet.
