1 pound baby carrots (or regular carrots, peeled and cut into sticks)

2 tablespoons olive oil

2 tablespoons honey

1 teaspoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon sea salt

¼ teaspoon black pepper

Fresh parsley, chopped (for garnish)

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large bowl, combine the baby carrots with olive oil, honey, chili powder, ground cumin, smoked paprika, sea salt, and black pepper.

      Toss the carrots until they are well coated with the mixture.

        Spread the carrots out in a single layer on the prepared baking sheet to ensure even roasting.

          Roast in the preheated oven for about 25-30 minutes, tossing halfway through, until the carrots are tender and caramelized.

            Once done, remove the carrots from the oven and let them cool for a few minutes.

              Transfer the roasted carrots to a serving dish and sprinkle with freshly chopped parsley for a pop of color and freshness.
