1 head of garlic

4 slices of sourdough bread

4 tablespoons unsalted butter, softened

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

2 tablespoons fresh basil, finely chopped

Salt and pepper to taste

Optional: 1 teaspoon red pepper flakes for some heat

Roast the Garlic: Preheat your oven to 400°F (200°C). Slice the top off the head of garlic to expose the cloves slightly. Drizzle with olive oil, wrap in aluminum foil, and roast for about 30-35 minutes until the cloves are soft and caramelized. Allow to cool, then squeeze the roasted garlic cloves into a bowl and mash them into a paste.

    Prepare the Bread: Spread a generous layer of butter on one side of each slice of sourdough bread.

      Mix the Cheeses: In a separate bowl, combine the shredded cheddar and mozzarella cheeses with the mashed roasted garlic, fresh basil, salt, pepper, and red pepper flakes if using. Mix thoroughly until well combined.

        Assemble the Sandwich: On the unbuttered side of two slices of bread, evenly distribute the cheesy mixture. Place the other two slices of bread on top, making sure the buttered sides are facing out.
