12 oz fresh or frozen cheese ravioli

1 whole bulb of garlic

3 tablespoons olive oil

1 cup heavy cream

1 teaspoon dried thyme

1/2 teaspoon red pepper flakes

Salt and black pepper to taste

1/2 cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Roast the Garlic: Preheat your oven to 400°F (200°C). Cut the top off the garlic bulb to expose the cloves. Drizzle with 1 tablespoon of olive oil and wrap in aluminum foil. Roast for 30-35 minutes, until the cloves are soft and caramelized. Allow to cool, then squeeze out the softened garlic into a bowl.

    Cook the Ravioli: In a large pot, bring salted water to a boil. Add the ravioli and cook according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the rest.

      Make the Sauce: In a large saucepan, heat the remaining 2 tablespoons of olive oil over medium heat. Add the roasted garlic and sauté for 1-2 minutes, allowing the flavors to infuse.
