1 tablespoon olive oil

2 apples (Granny Smith or Honeycrisp), peeled and diced

1/4 cup pure maple syrup

1/2 teaspoon cinnamon

1 tablespoon lemon juice

1 cup chicken broth

Prepare the Pork: Preheat the oven to 375°F (190°C). In a small bowl, mix the minced rosemary, minced garlic, olive oil, salt, and pepper. Rub this mixture all over the pork loin, making sure to coat it evenly.
