Ingredients

4 medium red potatoes, peeled and cubed

1 large onion, chopped

2 cloves garlic, minced

1 red bell pepper, diced

2 carrots, sliced

2 cups vegetable broth

2 tablespoons paprika (preferably sweet Hungarian paprika)

1 teaspoon caraway seeds

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

2 tablespoons olive oil

1 tablespoon tomato paste

Fresh parsley, chopped, for garnish

Instructions

In a large pot, heat the olive oil over medium heat. Add the chopped onions and sauté for about 5 minutes, until they become translucent.

Add the minced garlic and diced red bell pepper, cooking for an additional 2-3 minutes, stirring frequently to prevent burning.

Stir in the tomato paste and cook for another minute to deepen its flavor.

Add the cubed potatoes, sliced carrots, paprika, caraway seeds, thyme, bay leaf, and season with salt and pepper. Stir until the vegetables are well coated with spices.

Pour in the vegetable broth and bring to a gentle boil. Once boiling, reduce the heat to low, cover, and let simmer for 25-30 minutes, or until the potatoes and carrots are tender.

Once cooked, taste and adjust seasoning if necessary. Remove the bay leaf before serving.

Serve hot, garnished with fresh chopped parsley for added color and flavor.
