300g fettuccine pasta

200g Italian sausage, removed from casings

3 cloves garlic, minced

1 cup heavy cream

1 cup freshly grated Parmesan cheese

Salt and black pepper to taste

1/4 teaspoon crushed red pepper flakes (optional)

Fresh parsley, chopped (for garnish)

Zest of 1 lemon (for added brightness)

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the fettuccine according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Brown the Sausage: In a large skillet, heat olive oil over medium heat. Add the sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

      Sauté Garlic: Add minced garlic to the skillet with the sausage and sauté for an additional 1-2 minutes, until fragrant.

        Make the Alfredo Sauce: Reduce the heat to low and pour in the heavy cream. Stir well, scraping up any browned bits from the bottom of the skillet. Allow the cream to simmer for 2-3 minutes, thickening slightly.

          Add Cheese: Gradually stir in the grated Parmesan cheese until melted and the sauce is creamy. If the sauce is too thick, add some reserved pasta water, one tablespoon at a time, until the desired consistency is reached.

            Combine Pasta and Sauce: Add the cooked fettuccine to the skillet, tossing to coat the pasta fully with the sauce and sausage mixture. Season with salt, black pepper, and crushed red pepper flakes to taste.

              Finish with Freshness: Stir in the lemon zest and mix well for a fresh flavor boost.

                Serve: Plate the pasta in bowls and garnish with freshly chopped parsley for a pop of color.
