1 pound breakfast sausage (mild or spicy, based on preference)

8 large eggs

2 cups whole milk

1 cup shredded sharp cheddar cheese

1 cup diced bell peppers (mixed colors)

1 cup diced onion

4 cups cubed day-old bread (white or whole grain)

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley for garnish (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or olive oil.

    In a large skillet over medium heat, brown the breakfast sausage, breaking it into crumbles as it cooks. Once no longer pink, drain excess fat and remove from heat.

      In a large mixing bowl, whisk together the eggs, whole milk, garlic powder, onion powder, salt, and black pepper until well combined.

        Add the sautéed sausage, diced bell peppers, diced onion, and shredded cheddar cheese to the egg mixture, stirring to combine.

          Gently fold in the cubed bread until thoroughly mixed, ensuring all bread is coated with the egg mixture.

            Pour the mixture into the prepared baking dish, spreading it out evenly with a spatula.

              Bake in the preheated oven for 35-40 minutes, or until the center is set and the top is lightly golden.

                Once baked, remove from oven and let it sit for 5 minutes before slicing into squares. Garnish with fresh parsley if desired.
