6 breakfast sausage links

4 large eggs

1/4 cup milk

Salt and pepper to taste

1 cup shredded cheddar cheese

4 large flour tortillas

2 tablespoons olive oil

Fresh cilantro or green onions for garnish (optional)

Instructions
 

In a skillet over medium heat, cook the breakfast sausage links until browned and cooked through, about 8–10 minutes. Remove from the skillet and let cool slightly. Slice each sausage link into small pieces.

    In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.

      In the same skillet (drain excess fat if necessary), pour in the egg mixture and cook on low heat, stirring occasionally until just set but still slightly runny, about 3–4 minutes.

        Add the chopped sausage pieces and shredded cheddar cheese to the eggs. Mix everything together until the cheese is melted and the eggs are fully cooked, about 1–2 more minutes. Remove from heat.

          Lay out the flour tortillas on a flat surface. Divide the sausage, egg, and cheese mixture evenly among the tortillas, placing the filling in the center of each.

            Fold the sides of the tortilla in and then roll it up tightly from the bottom to the top, encasing the filling completely.

              In the same skillet, add olive oil and heat over medium-high heat. Place the roll-ups seam side down in the skillet and cook until golden brown and crispy on all sides, about 2–3 minutes per side.

                Remove the roll-ups from the skillet and let them cool slightly before slicing them in half.
