1 pound breakfast sausage (mild or spicy, your choice)

8 large eggs

1 cup milk (whole or 2%)

2 cups shredded cheddar cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried basil

Salt and pepper to taste

5 cups stale bread, cubed (French bread or brioche work well)

1 bell pepper, diced (any color)

1 cup fresh spinach, chopped

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet over medium heat, cook the breakfast sausage, breaking it up with a spoon until browned and cooked through. Drain excess fat, if necessary.

      While the sausage is cooking, whisk together the eggs, milk, garlic powder, onion powder, dried basil, salt, and pepper in a large bowl until well combined.

        Layer the cubed stale bread in the bottom of a greased 9x13 inch baking dish.

          Evenly spread the cooked sausage over the bread, followed by the diced bell pepper and chopped spinach.

            Pour the egg mixture over the layers in the baking dish, making sure everything is coated evenly.

              Sprinkle the shredded cheddar cheese on top of the casserole.

                Bake in the preheated oven for 30-35 minutes or until the eggs are set and the top is golden brown.

                  Let the casserole cool for 5-10 minutes before slicing into squares and serving.
