Sausage Egg Casserole

1 lb Italian sausage (mild or spicy, based on preference)

8 large eggs

1 cup milk

2 cups shredded mozzarella cheese

1 cup fresh spinach, chopped

1 bell pepper (red or green), diced

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

6 slices of bread, cubed (preferably a day or two old)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.

    In a skillet over medium heat, add the Italian sausage. Cook until browned and fully cooked, breaking it apart with a wooden spoon as it cooks. Drain any excess fat and set aside.

      In a mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

        Fold the chopped spinach, diced bell pepper, and onion into the egg mixture.

          In the greased baking dish, evenly distribute the cubed bread, then layer on the cooked sausage. Pour the egg and vegetable mixture over the top.

            Sprinkle the shredded mozzarella cheese evenly over the casserole.

              Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden brown.

                Allow the casserole to cool for about 5 minutes before slicing into squares and serving.
