1 medium onion, diced

1 red bell pepper, diced

4 cups frozen hash browns (thawed)

8 oz cream cheese, softened

6 large eggs

1 cup milk

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

2 cups shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C). Grease a large baking dish (about 9x13 inches) with cooking spray or butter.

    In a large skillet over medium heat, cook the sausage until browned and crumbled, about 5-7 minutes. Add the diced onion and bell pepper, sautéing until softened, about 3-4 minutes. Remove from heat and set aside.

      In a large mixing bowl, combine the softened cream cheese with the milk and whisk until smooth.

        Add the eggs, garlic powder, onion powder, salt, and pepper to the cream cheese mixture. Whisk until fully incorporated.

          In the prepared baking dish, layer the thawed hash browns evenly across the bottom. Top with the sausage, onion, and pepper mixture, and spread evenly.

            Pour the egg and cream cheese mixture over the top of the sausage and hash browns evenly.

              Sprinkle the shredded cheddar cheese over the casserole.

                Bake in the preheated oven for 30-35 minutes, or until the eggs are set and the top is golden brown and bubbly.
