1 pound Italian sausage (mild or spicy, casing removed)

1 medium onion, chopped

2 cloves garlic, minced

2 medium carrots, diced

2 celery stalks, diced

1 can (14.5 oz) diced tomatoes, undrained

1 can (15 oz) cannellini beans, rinsed and drained

4 cups chicken or vegetable broth

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

3 cups fresh spinach or kale, chopped

1 tablespoon olive oil

Grated Parmesan cheese for serving

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes, until the vegetables are softened.

    Add the Italian sausage. Cook, breaking it apart with a spoon, until browned and fully cooked, about 8-10 minutes.

      Stir in the drained diced tomatoes, cannellini beans, and broth. Add the dried oregano and thyme, then season with salt and pepper to taste.

        Bring the soup to a gentle boil, then reduce the heat and let it simmer for 15-20 minutes, allowing the flavors to meld together.

          Add the chopped spinach or kale to the pot and cook for an additional 5 minutes, until the greens are wilted and tender.

            Taste and adjust seasoning if necessary.

              Serve hot, garnished with grated Parmesan cheese on top.
