4 large yellow onions, thinly sliced

2 tablespoons olive oil

1 cup light non-alcoholic beer

2 teaspoons brown sugar

Salt and pepper to taste

6 ounces salted pork belly, diced

2 cloves garlic, minced

1 tablespoon fresh thyme leaves

1 tablespoon apple cider vinegar

1/4 teaspoon smoked paprika

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced salted pork belly and cook until crispy and golden, about 5-7 minutes. Remove the pork from the skillet and drain on paper towels, leaving the rendered fat in the pan.

    In the same skillet, add the sliced onions and sauté over medium heat until they begin to soften, about 5 minutes.

      Sprinkle the brown sugar over the onions, stirring well to combine, and continue cooking for another 10-12 minutes, until the onions are caramelized and deep golden brown.

        Add the minced garlic and fresh thyme to the onions, and cook for an additional 2-3 minutes until fragrant.

          Pour in the non-alcoholic beer, stirring to deglaze the pan, scraping up any flavorful bits stuck to the bottom. Let it simmer for about 5-7 minutes until the beer is reduced by half.

            Stir in the apple cider vinegar and smoked paprika, then return the crispy salted pork belly to the skillet. Season with salt and pepper to taste. Heat everything together for another 2 minutes.

              Remove from heat and let it rest for a couple of minutes before serving.
