1 pound breakfast sausage (your choice: pork, turkey, or plant-based)

6 large eggs

1 cup milk

3 cups day-old bread, cubed

2 cups shredded cheddar cheese

1 cup fresh spinach, chopped

1 small onion, diced

1 teaspoon garlic powder

1 teaspoon dried oregano

Salt and pepper to taste

Optional: Fresh herbs for garnish (like parsley or chives)

Instructions
 

Preheat your oven to 350°F (175°C) and grease a 9x13-inch casserole dish.

    In a large skillet over medium heat, add the breakfast sausage. Cook until browned and crumbly, breaking it apart with a spatula (about 5-7 minutes). Remove the cooked sausage from the skillet and drain any excess grease.

      In the same skillet, add the diced onion and cook until softened (about 3-4 minutes). Add the chopped spinach and sauté until wilted (another 1-2 minutes).

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, oregano, salt, and pepper until well combined.

          Layer the cubed bread evenly in the greased casserole dish. Sprinkle the cooked sausage and sautéed onion-spinach mixture over the bread.

            Pour the egg mixture evenly over the ingredients in the casserole. Use a spatula to gently press down to allow the egg mixture to soak into the bread.

              Top with shredded cheddar cheese, spreading it evenly across the top.

                Bake in the preheated oven for 30-35 minutes, or until the casserole is set and the cheese is bubbly and golden.

                  Allow the casserole to cool for a few minutes before slicing into squares.
